
Why we swapped old heating wires for 800W Infrared Lamps
Most restaurant ovens work the same way: they heat up some wires, those wires heat the air, and then the air—hopefully—heats your food. It’s a slow process. You waste a ton of energy just waiting for the air to get hot. We decided to stop messing around with the air. Instead, we use 800W infrared bulbs. These don’t bother with the middleman; they beam energy straight into the food.
The magic of 800W IR
Here is the best part: these lamps hit their peak temperature almost the second you flip the switch. No more standing around waiting for the oven to “warm up.” It’s fast. Really fast. When your oven isn’t idling for twenty minutes before every rush, your electricity bill actually starts to look reasonable. For a kitchen pushing out hundreds of plates a shift, those saved kilowatt-hours add up quickly.
Getting them installed
We make these out of high-purity quartz glass. Why? Because in a real kitchen, you’re turning things on and off constantly. Cheap glass cracks under that kind of stress, but quartz handles the shock. We stuck with the 800W rating because it’s the sweet spot. You get plenty of heat, but you won’t trip your circuit breakers the moment you turn the oven on. If you’re putting these into an old oven, just double-check your sockets. We designed most of these to be “drop-in” replacements, so you shouldn’t have to rip out your wiring or rebuild the whole board.
A few things to keep in mind
Now, infrared isn’t a magic wand. It’s directional. If you’re used to the slow, ambient heat of a traditional oven for roasting, this is a different beast. If you stack your food too high, the top layer will char before the bottom even gets warm. You’ll want to play around with your rack spacing. Find the “sweet spot” of the radiation pattern so you don’t end up with burnt edges and cold centers. At the end of the day, saving money on power comes down to two things: keeping the door closed and cutting out the pre-heat time. By skipping the air-heating phase, you’re just being more efficient.
