
Stop Fighting Those Cold Edges in Your Bread Ovens
If you’ve spent any time with a large industrial oven, you know the frustration. The loaves in the middle come out perfect, but the ones on the edges? They’re pale. Underbaked. Just… off. It happens because the oven walls basically act like a giant sponge, soaking up all the heat and leaving your edge loaves in the cold. It’s a pain, and it ruins your consistency. We fix this using Medium Wave IR emitters. Instead of just hoping the air gets hot enough, we target those cold spots directly. Why Medium Wave? Here is the thing: short wave heat is too aggressive, and standard convection just wastes energy heating the air. Medium wave is the “sweet spot.” It sinks into the dough properly without burning the surface. We use quartz glass tubes with a very specific filament wrap to concentrate the heat right where it’s needed. If you’re switching from old-school resistive elements to IR, make sure your control boards and relays can handle the jump. IR hits its peak temperature almost instantly, and your hardware needs to be ready for that kind of speed. A Few Tips for the Setup Since IR is so fast, it can be a bit jumpy. If your PID controllers aren’t tuned tightly, you might overshoot your target temperature. And definitely watch where you put your thermocouples. If the sensor is too far from the emitter, there’s a lag in the feedback loop, and you’ll be guessing. Put your sensors directly in the heat path. Once that’s dialed in, those pale edges disappear. You get a uniform, golden crust across the entire rack, every single time.
